Green Food




We are all familiar with green food, and as we were growing up, most of us were told “eat up your greens, they are good for you”, and this is absolutely true,  However, the problem today is we live hectic lives and don’t have the time to prepare nutritional meals, containing green vegetables. Opting for convenience foods instead, our diets lack essential vitamins and minerals.

However, there is more to green food, than just the cabbage and broccoli, we usually have with our dinner and the modern green food revolution, brings us many super greens, essential for our health.  These include alfalfa and wheat and barley grass, which although easy to sprout  in a window sill in the kitchen, there are many supplements available.

There has been a great deal of research into the health giving effects of these super greens on both humans and animals and this research concluded that alfalfa, green barley and wheat grass had the highest nutritional value of all green leafy foods.

Studies of barley grass, by the School of Bio-resources at the University of Andong in Korea,  have found a potent plant chemical  in this green food called lunasin. Lunasin is also found in soya and is known for preventing skin cancer cell multiplying.

Research into phytoestrogen’s, like alfalfa show that it plays an important part in preventing menopausal symptoms, cancer ,  heart disease and osteoporosis.
